The Lion’s Tail, a Prohibition-era cocktail combining bourbon, lime juice, allspice liqueur, simple syrup, and bitters, crosses a classic Whiskey Sour with elements of tropical cocktails. The recipe was first published in London in 1937 in The Café Royal Cocktail Book by William James “Billy” Tarling. 

The Lion’s Tail is widely believed to be the work of an American bartender who crossed the Atlantic during Prohibition. The cocktail’s name nods to the American expression “twisting the lion’s tail,” which was slang for provoking the British, an allusion to the lion on the royal coat of arms.

After fading from view for decades, the Lion’s Tail returned to relevance in the late 2000s, aided by the reissue of Ted Haigh’s Vintage Spirits and Forgotten Cocktails and the reappearance of allspice dram on the U.S. market. Once bartenders had both the recipe and its defining ingredient, the Lion’s Tail quickly reclaimed its place behind the bar.

Why the Lion’s Tail works

The Lion’s Tail balances the structure of a sour with the aromatic intensity of spiced liqueurs more commonly associated with tropical drinks like the Three Dots and a Dash. Bourbon provides a warm, full-bodied foundation, with vanilla and caramel notes that anchor the drink without overwhelming it. Allspice dram brings a concentrated burst of pimento-driven spice, including clove, cinnamon, and nutmeg, which adds depth and a Caribbean edge.

Fresh lime juice cuts through the richness with clean acidity, while simple syrup mediates between citrus and spirit, keeping the drink taut rather than aggressive. A dash of Angostura bitters finishes the cocktail with herbal bitterness, tying the spice elements together and giving the drink its signature, lingering complexity.
