Daniel says this his any-night roast chicken: five minutes of prep, a cold oven, and beautiful roasted skin at the finish. It’s become my go-to as well, although I usually make it with chicken thighs or whole legs. I love that it starts cooking while the oven warms up, so I can start the dinner process the moment I walk in the door.
